Ingredients

1 lb firm tofu or 1 lb extra firm tofu , drained
1 small butternut squash ( about 2 lb/1 kg )
1 tablespoon vegetable oil
1 onion , sliced
2 garlic cloves , minced
2 teaspoons Thai red curry paste
14 ounces light coconut milk
1/2 cup vegetable stock
2 tablespoons soy sauce
1 tablespoon packed brown sugar
1 tablespoon fish sauce or 1 tablespoon soy sauce
1/2 teaspoon salt
1 sweet red pepper , thinly sliced
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
2 tablespoons salted peanuts , chopped
Thai Tofu and Squash Curry is a delicious and healthy vegan curry recipe that's perfect for a cozy night in. This fragrant curry is bursting with flavor, thanks to the red curry paste and a blend of healthy vegetables like butternut squash and red peppers. The dish is finished with a sprinkle of chopped peanuts and fresh cilantro for added texture and aroma. Instructions

1.Cut the tofu into cubes. Peel the butternut squash, remove the seeds and cut it into bite-sized pieces.
2.Heat the oil in a large, deep skillet. Add the sliced onions and cook until they are golden brown and caramelized.
3.Add the minced garlic and Thai red curry paste to the skillet. Cook for 1-2 minutes, stirring frequently.
4.Add the cubed tofu, squash, light coconut milk, vegetable stock, soy sauce, brown sugar, fish sauce (or more soy sauce) and salt to the skillet. Stir well to combine.
5.Bring the curry to a simmer and cook for 15-20 minutes, or until the squash is tender and the sauce has thickened slightly.
6.Add the sliced red pepper and cook for an additional 5 minutes.
7.Remove the skillet from the heat and stir in lime juice and chopped cilantro. Serve the curry over steamed rice and garnish with chopped peanuts.
