Ingredients

2 teaspoons peanut oil
1 package tempeh
1/2 cup vegetable stock

2 cloves garlic , minced
1 -2 serrano peppers or 1 -2 jalapeno chile , minced ( seeded and deveined )
1 teaspoon grated ginger
1/2 cup unsweetened coconut milk
2 scallions , sliced thin
1/2 teaspoon salt
1 teaspoon fresh lime juice
4 tablespoons chopped fresh cilantro

Instructions

1.Cut the tempeh into cubes.

5.In the same wok, add the vegetable stock and tamari. Bring to a boil and reduce the heat to low.

7.Add the unsweetened coconut milk, sliced scallions, and salt, and cook for an additional 5 minutes.
8.Add the tempeh back into the wok and stir to combine.
9.Add fresh lime juice and chopped fresh cilantro just before serving.
