2/3 cup sugar

1/2 cup rice , vinegar

1/2 teaspoon kosher salt ( to taste )
3 tablespoons fresh lime juice ( not the bottled kind )
1 tablespoon fish sauce
1/2 - 1 teaspoon red pepper flakes

Instructions

1.In a bowl, mix brown sugar, coriander seeds, black peppercorn, mustard seeds, celery seed, and 1/4 tsp salt.
2.Place swordfish fillets on a dish and coat evenly with spice mixture.
3.Heat a grill pan or grill over medium-high heat and brush with olive oil.
4.Grill swordfish 6-8 minutes per side until cooked through.
5.In a small saucepan, bring sugar, water, rice vinegar, garlic, and salt to a simmer and cook for 3-4 minutes until sugar dissolves and sauce thickens.
6.Remove from heat and let cool. Stir in fresh lime juice, fish sauce, and red pepper flakes to make sauce.
