Ingredients

1/4 cup rice vinegar

1 lb chicken breast , skinless , boneless , cut into bite-sized pieces
1 1/2 tablespoons vegetable oil , divided
1 cup chopped onion
1 cup chopped carrot
1 package presliced mushrooms
1/2 cup light coconut milk
1 tablespoon fish sauce
1/2 teaspoon salt
1 cup fresh bean sprout
1/4 cup chopped fresh cilantro

Instructions

1.In a small bowl, whisk together rice vinegar, brown sugar, lime juice, red curry paste, and crushed red pepper flakes.
2.Marinate chicken in the mixture for at least 10 minutes.
3.In a large skillet, heat 1 tablespoon of oil over medium-high heat.
4.Add chicken to the skillet and stir-fry for 5-6 minutes or until lightly browned.
5.Remove chicken from skillet and set aside.
6.Add remaining oil to the skillet and sauté onion, carrot, and mushroom for a couple of minutes.
7.Add coconut milk, fish sauce, and salt. Stir in bean sprouts and sautéed chicken and stir-fry for an additional 2 minutes.
8.Sprinkle with cilantro and serve hot with rice.
