Ingredients

3/4 lb large raw shrimp , peeled and deveined
1 teaspoon red curry paste ( see note )
1 teaspoon sugar

cooking oil , for sauteeing shrimp
3 tablespoons fresh-squeezed lime juice
2 tablespoons sugar

2 ounces dry rice noodles ( see note )
3 cups iceberg lettuce
1/2 cup carrot , julienned
1/2 cup cucumber , seeded and sliced into half-moons
1/2 cup fresh bean sprout
1/2 cup red bell pepper , diced
1/4 cup fresh cilantro , chopped
1/4 cup fresh mint leaves , torn
chopped peanuts ( optional )
wonton wrapper , sliced into strips and fried ( optional )

Instructions

1.Place the shrimp in a bowl, and add the red curry paste, sugar, vegetable oil, and salt.

4.Cook until just pink and opaque, then remove from heat and set aside.

6.Soak the dry rice noodles in hot water for a few minutes until just softened, then drain and rinse.

8.Top with the cooked shrimp and soaked rice noodles.

10.Garnish with chopped peanuts and fried wonton strips, if desired.
