Instructions

1.In a large bowl, combine 1/2 cup each of granulated sugar and salt, stirring until well combined.
2.Add the chicken breasts to the mixture and toss until completely coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or up to 4 hours.
3.In a small bowl, whisk together 1 teaspoon red pepper flakes, 3 minced garlic cloves, 1/4 cup distilled white vinegar, 1/4 cup lime juice, 2 tablespoons fish sauce, and 1/3 cup granulated sugar.
4.In a separate bowl, combine 12 minced garlic cloves, 2 inches minced fresh ginger, 2 tablespoons ground black pepper, 2 tablespoons ground coriander, 2/3 cup chopped fresh cilantro leaves, 1/4 cup lime juice, and 2 tablespoons vegetable oil.
5.Preheat the grill to medium heat. Remove the chicken from the marinade and brush each breast with vegetable oil.
6.Grill each breast for 5-6 minutes per side, until golden brown and fully cooked. Serve with both dipping sauces.
