Ingredients

phyllo pastry , slices roughly 8x16 inches
200 g ground chicken
200 g mushrooms , thinly sliced
1 small carrot , grated
3 tablespoons minced ginger
2 tablespoons garlic , finely chopped
2 tablespoons sesame oil
olive oil
1 pinch salt
canola oil or vegetable oil
sweet chili sauce

Instructions

1.Preheat your oven to 350F.
2.In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
3.Add the ground chicken and cook until it browns, for about 5 minutes.
4.Add the mushrooms, garlic, ginger and carrot to the skillet and cook until the mushrooms are soft and the mixture is fragrant, for about 5 minutes.
5.Drizzle a baking sheet with canola oil or vegetable oil.
6.Take a slice of phyllo pastry and brush it with sesame oil. Fold it in half, brush it again with sesame oil, and place a spoonful of the chicken-mushroom mixture in the center of the pastry.
7.Roll the pastry tightly, tucking in the sides as you go and brush the top and sides with sesame oil. Repeat steps 6 and 7 with the remaining ingredients, making 8 spring rolls in total.
8.Place the spring rolls on the prepared baking sheet, and bake them in the oven for 15-20 minutes, or until golden-brown.
9.Serve hot with a side of sweet chili sauce.
