Ingredients

1 cup tamarind puree ( page 32 )
5 dried chilies , soaked
3 shallots
1 tablespoon soy sauce
1/2 cup jaggery , palm sugar or 1/2 cup light brown sugar
7 garlic cloves
1 tablespoon fermented soybeans ( page 10 )
1 tablespoon vegetable oil
1 cup shredded jicama
2 tablespoons oyster sauce
20 spring roll wrappers , sheets
2 cups shredded lettuce
2 cups boiled bean sprouts
1 cup crispy pork rind , coarsely chopped
2 tablespoons fried shallots ( page 34 )
4 oz/ 100 grams roasted pork , thinly sliced
20 cooked shrimp , halved lengthwise ( prawns )

Instructions

1.Mix tamarind puree, soaked dried chilies, shallots, soy sauce, palm sugar, fermented soybeans, and garlic cloves in a blender until a smooth paste forms.
2.Heat vegetable oil in a pan and cook the thinned out paste for 5 minutes or until fragrant, stirring constantly.
3.Add shredded jicama and oyster sauce to the pan and cook for another minute.
4.Take off the heat and let it cool down for a while.
5.Place a spoonful of the mixture in the center of a spring roll wrapper and add some shredded lettuce, boiled bean sprouts, crispy pork rind, and fried shallots.
6.Top with thinly sliced roasted pork and cooked shrimp that are halved lengthwise.
7.Roll the spring roll up neatly and securely, repeating until all the filling is used up.
