Ingredients

1/2 small shallot , minced
4 garlic cloves , minced very fine
1 tablespoon fresh ginger , minced
1 serrano pepper , seeded & sliced fine
1 lime , zest of
2 tablespoons low sodium soy sauce
1 tablespoon fish sauce
1 tablespoon palm sugar
1 tablespoon brown sugar
2 ounces white vinegar
2 ounces water
1/4 small head of cabbage , cut in short strips
1 tablespoon at least fresh mint leaves , quartered ( about 2 stalks )
2 tablespoons at least fresh basil leaves , chopped ( about 2 stalks )
1/3 cup fresh cilantro , chopped ( a small handful )
1 lb fresh asparagus
2 ounces bean thread noodles
2/3 lb bay scallop
1 tablespoon butter
1 ounce fruit-flavored brandy ( blackberry or other )
1 lb tri-tip steak
your favorite steak seasoning ( e.g . McCormick 's )
1 lime , juice of

Instructions

1.In a blender, add shallot, garlic, ginger, Serrano pepper, lime zest, soy sauce, fish sauce, palm sugar, brown sugar, white vinegar, and water. Blend until all are combined and sugar is dissolved.
2.Using a mandolin or knife, thinly slice cabbage and place in a bowl. Add fresh mint leaves, fresh basil leaves, and fresh cilantro.
3.Preheat grill to medium heat. Cut the hard bottoms off of the asparagus. Cut bay scallops into small pieces. Cook bean thread noodles according to the package and put aside.
4.Heat butter in a pan until melted. Add fruit-flavored brandy and bay scallops, cook for 3-4 minutes until brown and coated in juices. If the scallops are big, reduce the heat and cook until they are cooked all the way through. Put aside when ready.
5.Rub tri-tip steak with your favorite steak seasoning. Put on the grill and cook until steak is done, about 7-8 minutes each side. Remove from heat and let rest for 10 minutes. Then, slice against the grain into thin strips.
6.On top of the sliced cabbage, sprinkle a little bit of lime juice. Then add asparagus, bean thread noodles, bay scallops, and sliced steak. Drizzle the sauce from the blender over the top of the salad. Add more lime juice to taste.
