1 pineapple
8 garlic cloves , roughly chopped
1 cup fresh coriander , chopped
1/4 cup rice vinegar
1/4 cup light brown sugar , packed
2 tablespoons soy sauce
2 tablespoons fish sauce

1 1/2 teaspoons pepper
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg , grated
1 bone-in pork rib roast ( about 2 kg )
1/4 teaspoon salt

Instructions

1.Preheat the oven to 180°C.
2.Cut off the top and bottom of the pineapple, and then cut away the skin. Cut the pineapple in half lengthwise and then slice each half into 1/2-inch-thick wedges.
3.In a food processor, pulse the garlic, chopped fresh coriander, rice vinegar, light brown sugar, soy sauce, fish sauce, ground coriander, pepper, cumin, cayenne pepper, ground cloves, and nutmeg until combined.
4.Season the pork rib roast with salt, and then rub the spice paste all over the pork.
5.Arrange the pineapple wedges in a single layer in a large baking dish. Place the pork on top of the pineapple.
6.Roast until the pork is cooked through and the internal temperature reaches 63°C, about 1 1/2 to 2 hours.
7.Let the roast pork rest for 10 to 15 minutes. Serve hot topped with coriander sprig.
