Ingredients

1 cup water
1 cup sugar
30 water chestnuts
3 drops red food coloring
3/4 cup tapioca flour
2 1/2 cups coconut milk
rose essence or jasmine essence

Instructions

1.Stir water and sugar together in a saucepan over medium heat until sugar dissolves.
2.Once the sugar has dissolved, bring the mixture to a boil and stir continuously for 3 minutes.
3.Remove from heat and add 3 drops of red food coloring to the mixture.
4.Gently stir in already peeled and diced water chestnuts.
5.Cover saucepan and let it sit for 30 minutes.
6.Meanwhile, mix together tapioca flour and 1/4 cup of water into a dough.
7.Roll the dough into small balls.
8.Boil a pot of water and then add the tapioca balls into the boiling water.
9.Remove the tapioca balls from water and immediately add them into cold water.
10.Combine coconut milk, 1/4 cup of water, and rose or jasmine essence together in a bowl.
11.Finally, add the red rubies to the coconut milk mixture and serve.
