Ingredients

2 tablespoons vegetable oil
1 lb ground pork
1 small onion , finely chopped
2 tablespoons minced fresh garlic ( or to taste )
1 can chicken broth ( with 1 can cold water )
3 tablespoons low sodium soy sauce
2 tablespoons fresh lime juice
1 tablespoon fish sauce ( optional )
2 -3 teaspoons chili-garlic sauce
1/4 teaspoon cayenne pepper ( or to taste )
2 red bell peppers , seeded and julienned ( or use 1 each red and green )
2 -3 cups sliced shiitake mushrooms
1 cup short-grain rice ( Aborio is good )
salt ( optional )
3 -4 green onions , finely chopped
1/4 cup fresh coriander , finely chopped
Thai Oven-Baked Rice with Shiitake Mushrooms is a flavorful dish that combines ground pork, shiitake mushrooms, and bell peppers with a zesty Thai-inspired sauce. Instructions

1.Preheat the oven to 375°F.
2.Heat the oil in a skillet over medium-high heat and add the ground pork. Cook until browned, breaking up any large clumps.
3.Add the onion and garlic to the skillet and cook until the onion is softened.
4.In a bowl, combine the chicken broth, soy sauce, lime juice, fish sauce (if using), chili-garlic sauce, and cayenne pepper. Set aside.
5.Add the bell peppers and shiitake mushrooms to the skillet and cook until softened.
6.Add the rice and stir until coated in the vegetable mixture.
7.Transfer the mixture to a 9x13 inch baking dish and pour the chicken broth mixture over the top. Do not stir.
8.Cover the dish tightly with foil and bake for 45 minutes.
9.Remove the foil and bake for an additional 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
10.Sprinkle chopped green onion and coriander on top and serve hot.
