1 1/2 cups jasmine rice
peanut oil
2 kg small black mussels
3 tablespoons green curry paste ( I use Thai kitchen brand . )
1 1/2 cups water
1 teaspoon fish stock granules
1 teaspoon vegetable bouillon granules
2 teaspoons fish sauce
2 1/2 teaspoons brown sugar
800 ml coconut milk
200 ml coconut cream
1/4 cup fresh coriander , finely chopped
4 -5 green onions , sliced
1 tablespoon lime juice

Instructions

1.Rinse jasmine rice until the water runs clear. In a pot, add 1 3/4 cups of water to 1 1/2 cups of rice and 1 tablespoon of peanut oil. Bring to a boil and stir, then reduce heat to low for 15-20 minutes until the rice is cooked.
2.Clean and debeard the mussels, discarding any that remain open after tapping. In a wok, heat 1 tablespoon of peanut oil and add the green curry paste. Cook for 2-3 minutes until fragrant. Add water, fish stock granules, vegetable bouillon granules, fish sauce, and brown sugar. Stir well and bring to a boil.
3.Add the mussels and coconut milk and cook on high heat, covered, for about 6-7 minutes or until the mussels have cooked through. Add coconut cream and cook for another minute. Stir well and remove from heat. Discard any mussels that have not opened.
4.To serve, add lime juice, coriander, and onions to the mussels and stir. Serve with jasmine rice.
