Ingredients

1/4 cup champagne vinegar
1/4 cup rice wine vinegar
1 tablespoon mirin
1/4 cup granulated sugar
1/4 inch piece gingerroot , smashed
1/4 small fresh red chili pepper
1 inch piece hearts of palm , outer layer removed , sliced into thin rounds and rinsed ( You can use fresh or canned )
2 lobsters , cooked
1/4 cup fresh basil , chopped
1/4 cup fresh cilantro , chopped
1 tablespoon shallot , minced
1/2 teaspoon garlic , minced
2 tablespoons lime juice
1 tablespoon lemon juice
2 tablespoons fish sauce
1 tablespoon honey
2 tablespoons vegetable oil
1 avocado , pitted and skinned
2 tablespoons lime juice
1/4 teaspoon garlic , minced
1/4 teaspoon shallot , minced
1 dash hot sauce
salt
1 1/2 cups mangoes , sliced ( You may substitute melon if preferred )
1/2 cup mango , finely diced ( Again , you may substitute melon )
This Thai-inspired dish takes the luxuriousness of lobster and combines it with the fresh, bold flavors of Southeast Asia. The hearts of palm add a nice crunch to the dish, while the avocado and mango lend a creaminess and sweetness. Instructions

1.In a bowl, combine both vinegars, mirin, sugar, ginger root, and red chili pepper. Stir to combine and dissolve the sugar.
2.Add the hearts of palm slices to the vinegar mixture and let sit for at least an hour, preferably overnight.
3.Remove the lobster meat from the shells and cut it into large chunks.
4.In a separate bowl, mix together the basil, cilantro, shallot, garlic, lime juice, lemon juice, fish sauce, honey, and vegetable oil. Stir to combine and add the lobster meat. Toss to coat the lobster in the marinade, cover the bowl, and let sit in the refrigerator for at least an hour, preferably overnight.
5.In another bowl, mash the avocado, lime juice, garlic, shallot, hot sauce, and salt together.
6.To assemble the dish, fan out the sliced hearts of palm on a plate.
7.Add the marinated lobster on top of the hearts of palm.
8.Drizzle the avocado mash over the lobster.
9.Sprinkle the diced mango over the entire dish.
