300 g julienned really green unripe papayas
3 tomatoes , wedges
3 cloves garlic
1 tablespoon dried shrimp , fried with little oil
8 fresh birds eye chiles , sliced
1 tablespoon fish sauce
1 tablespoon lime juice
1 tablespoon brown sugar or 1 tablespoon palm sugar
1 tablespoon roasted peanuts , pounded coarsely
1 tablespoon roasted cashew nuts
fresh long beans , cut into 2 inch

Instructions

1.Wash and clean the unripe papaya, garlic, tomatoes, long beans, and cabbage. Peel the unripe papaya and julienne it. Cut the long beans into 2-inch pieces. Cut the cabbage into small pieces.
2.In a mortar and pestle, pound the garlic and chilies.
3.Add the dried shrimp to the mortar and pound them together.
4.Season with fish sauce, lime juice, and brown sugar or palm sugar. Mix everything together.
5.Add the julienned papaya, long beans, and cabbage. Toss it well.
6.Add the tomatoes and crush them slightly. Toss again.
7.Add the roasted peanuts and cashew nuts. Mix well and serve.
