Ingredients

2 sparerib racks ( about 4 lbs )
1 cup chicken broth
1 cup coconut milk , unsweetened or 2 cups coconut non-dairy milk substitute
3 tablespoons Thai fish sauce or 3 tablespoons vietnamese fish sauce
1/4 cup vegetable oil
1 tablespoon cornstarch
4 whole cloves
12 black peppercorns
2 teaspoons coriander seeds
1 teaspoon caraway seed
1 teaspoon cumin seed
6 garlic cloves , peeled
1 shallot , peeled
3 whole serrano chilies , stemmed seeded
3/4 cup fresh basil leaf
3/4 cup fresh cilantro
1 teaspoon salt
1/2 cup vegetable oil

Instructions

1.Preheat the oven to 375F.
2.Cut the sparerib racks into individual ribs and set aside.
3.In a frying pan, heat 1/4 cup vegetable oil and toast the cloves, peppercorns, coriander seeds, caraway seeds and cumin seeds for 1-2 minutes or until fragrant. Remove from heat.
4.In a blender, combine the toasted spices, garlic, shallot, serrano chilies, basil leaves and cilantro leaves, along with the chicken broth and coconut milk. Puree to a smooth and thick consistency.
5.Pour the mixture into a large baking dish and add the fish sauce. Mix well.
6.Add the ribs, making sure they are fully coated in the sauce.
7.Bake the ribs, uncovered, for 1 hour 30 minutes or until tender.
8.In a separate bowl, whisk together 1 tablespoon cornstarch and 2 tablespoons water. Add to the baking dish and stir well to thicken the sauce.
9.Serve hot with rice or noodles.
