3 red chili peppers , seeded & cut into slivers
1 whole fresh cilantro leaves
Thai Galloping Horses is a popular Thai dish typically made with horse meat, but this vegetarian version replaces the meat with shiitake mushrooms. The dish gets its name from the way the ingredients are stir-fried quickly at high heat, resembling the galloping of horses. Instructions

1.In a small bowl, mix together the garlic, cilantro, rice wine, and peppercorns.
2.Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic mixture and stir-fry for 30 seconds.
3.Add the sliced shiitake mushrooms, soy sauce, and sugar to the skillet. Stir-fry for 3-4 minutes, until the mushrooms are tender.
4.Add the chopped peanuts to the skillet and stir-fry for an additional minute.
5.Cut the pineapple into small chunks and add it to the skillet along with the sliced orange, avocado, and chili peppers. Stir-fry for 2-3 more minutes until the fruit is heated through.
6.Garnish the dish with fresh cilantro leaves and serve hot.
