3 large eggs
1 tablespoon curry powder
1 red onion
2 garlic cloves ( minced )
1 fresh chili pepper
1 teaspoon grated fresh ginger
1/2 cup of chopped fresh coriander

Instructions

1.Preheat oven to 375°F (180°C)
2.In a large bowl, whisk together the coconut milk, eggs, Thai curry paste, curry powder, garlic, ginger, and chopped coriander.
3.Drain the tuna and add it to the bowl, along with the chopped onion and chili pepper. Stir well to combine.
4.Soak the rice vermicelli in boiling water for about 5 minutes, then rinse and drain. Add the vermicelli to the tuna mixture and stir to combine.
5.Spoon the mixture into greased mini muffin tins. Bake for 15-20 minutes, until the muffins are golden brown on top. Allow to cool for a few minutes before removing from the tin.
6.Serve the Thai Fish Mini Muffins warm, garnished with additional chopped coriander if desired.
