Ingredients

12 spring roll wrappers
cooking spray
1 tablespoon oil
5 links thick pork sausages
1 red capsicum , finely diced
60 g snow peas , thinly sliced
1 tablespoon red curry paste
400 ml coconut cream
1 teaspoon brown sugar
2 green onions , thinly sliced
fresh coriander leaves , to garnish

Instructions

1.Preheat oven to 200°C.
2.Cut each spring roll wrapper in half, brush with cooking spray and press into a greased 12-capacity muffin tin.
3.Heat the oil in a frying pan over a medium heat and crumble in the sausage meat.
4.Add the diced capsicum, sliced snow peas, red curry paste and brown sugar. Cook for 5-7 minutes, until the vegetables are slightly soft and the sausage is cooked through.
5.Spoon mixture into the pastry baskets and drizzle over coconut cream.
6.Bake for 10 minutes, or until heated through and pastry is crisp.
7.Top with sliced green onions and coriander leaves to garnish.
