Ingredients

1 lb chicken breast , cubed ( may be slightly over a lb )
1/2 small lemon
2 -3 tablespoons vegetable oil ( I use a blend )
3 -4 garlic cloves , chopped
1/2 small onion , chopped fine
1 serrano pepper , sliced fine
2 teaspoons curry powder
2 tablespoons Thai red curry paste
salt and pepper
1/4 cup cilantro , chopped ( optional )

Instructions

1.First, take a small bowl and squeeze lemon juice in it.
2.Now, take a large skillet and heat oil in it. Add chopped garlic and onion, and sauté for 2 minutes.
3.Add sliced serrano pepper and continue to sauté for another minute.
4.Add cubed chicken breast into the skillet and stir fry until lightly browned, approximately 5 minutes.
5.Mix curry powder and Thai red curry paste in the skillet, and cook chicken for 5 more minutes until it is fully cooked.
6.Add salt and pepper according to your taste.
7.Take it off the heat, add cilantro, and stir well.
8.Serve hot with rice or bread.
