Ingredients

4 ounces beef sirloin , cut into 1 inch cubes ( or julienne 1 1/2 inch long )
1 egg , hard boiled
4 tablespoons vegetable oil , divided use
4 ounces tofu , cut into 1 inch cubes ( firm )
1 shallots , finely chopped or 2 tablespoons finely chopped red onions
1 garlic clove , finely chopped
2 teaspoons red curry paste
1/4 cup coconut milk
1 teaspoon curry powder
1 tablespoon fish sauce
1 teaspoon sugar
2 ounces rice noodles , medium sized ( Sen Lek )
1 tablespoon peanuts , roasted and crushed
2 lime wedges
cilantro leaf ( to garnish ) ( optional )
Gueyteow Kak or Thai curried noodle is a popular street food in Thailand. The dish is made with rice noodles and a spicy red curry sauce, along with beef or chicken and tofu. Instructions

1.Boil the rice noodles in a pot of water until cooked, then drain and set aside.
2.Heat 2 tablespoons of vegetable oil in a wok over medium heat. Add the beef and stir-fry until browned. Remove from the wok and set aside.
3.In the same wok, heat the remaining 2 tablespoons of vegetable oil. Add the shallots and garlic and stir-fry until fragrant.
4.Add the red curry paste, coconut milk, curry powder, fish sauce, and sugar to the wok. Stir to combine and bring to a simmer.
5.Add the beef and tofu to the wok, stirring to heat through.
6.Serve the Thai curried noodle with the hard-boiled egg, rice noodles, peanuts, lime wedges, and cilantro leaf (optional) on top.
