2 medium telegraph cucumbers , peeled
2 tablespoons vegetable oil ( not olive oil )
1 small onion , chopped finely
1/2 cup unsalted peanuts
3 tablespoons white vinegar
2 tablespoons lime juice or 2 tablespoons lemon juice
1 teaspoon fish sauce
2 tablespoons palm sugar
1/2 teaspoon chili
1 cup chopped fresh coriander
2 teaspoons limes or 2 teaspoons lemons , zest of
Thai Cucumber and Peanut Salad-relish is a traditional Thai dish that is perfect for a refreshing snack or a side dish to accompany your main meal. Instructions

1.Cut the cucumbers in half lengthwise and remove the seeds with a spoon.
2.Slice the cucumbers thinly into half moons.
3.Heat the vegetable oil in a pan on medium heat.
4.Add the chopped onion and unsalted peanuts to the pan and cook for 2-3 minutes until the onion is soft.
5.In a small bowl, whisk together the white vinegar, lime juice or lemon juice, fish sauce, palm sugar, and chili.
6.Add the sliced cucumbers to the pan with the onion and peanuts and cook for a minute or two to soften the cucumbers slightly.
7.Remove the pan from the heat and pour the vinegar dressing over the cucumbers.
8.Add the chopped fresh coriander and lime or lemon zest to the pan and mix everything together well.
