Thai Corn Fritters, or Tod Man Khao Pod, are a popular street food snack in Thailand, where they are served hot and crispy with sweet chili sauce. The fritters are made with masa harina cornflour, a type of cornmeal that has been soaked in an alkaline solution to remove the outer husk and make it more easily digestible. This gives the fritters a unique texture and flavor that is crispy on the outside and soft on the inside, with a slightly sweet taste from the corn. The addition of spices like garlic, ginger, and lemongrass give the fritters a burst of flavor that is both savory and refreshing.

Instructions

1.In a large bowl, mix the masa harina cornflour, baking powder, and kosher salt with 1/2 cup of warm water to form a smooth batter.
2.Add the garlic and red chile paste, lemongrass paste, grated ginger, egg, and lime juice to the batter, and whisk until well-combined.
3.Remove the kernels from the ear of corn and stir them into the batter, along with the sweet and sour sauce and hot sauce.
4.Heat the olive oil in a large non-stick skillet over medium heat. Use a 1/4 cup measure to scoop the batter into the skillet, and flatten it out slightly using the back of a spoon.
5.Fry the fritters for 3-5 minutes on each side, until golden brown and crispy. Serve hot.
