fresh fruit , cut into chunks or slices to serve

Instructions

1.Preheat the oven to 350°F (180°C). Grease a baking dish with butter.
2.Beat the eggs in a bowl until frothy. Add brown sugar, vanilla essence, and flour; whisk until well combined.
3.Stir in the coconut milk and grated coconut until well mixed.
4.Pour the mixture into the greased baking dish.
5.Place the dish in a hot water bath and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
6.Allow to cool and refrigerate for 1 hour before serving. Garnish with mint leaves and icing sugar. Serve with fresh fruit slices.
