Ingredients

1/2 1/2 cup jasmine rice or 1/2 cup other sweet asian rice
1 can coconut milk ( you can use the light kind if you want , it just makes it a little less rich )
1/2 cup sugar
1 mango , sliced
Thai Coconut-Mango Sticky Rice is a classic Thai dessert, also known as Khao Neeo mamuang. This dish is enjoyed all year round and is often served at festivals and special occasions. The combination of sticky rice with sweet and creamy coconut milk and ripe mangoes makes for an unforgettable taste. Since the dessert has sweet,light and moist texture, it is like a perfect lightweight dessert that everyone's gonna enjoy with the sweet and refreshing mixed taste.

Instructions

1.Rinse the rice in cold water until the water runs clear and then let it soak in enough water to cover it for at least 30 minutes.
2.Drain the rice and place it in a pot with 1 cup of water. Bring it to a boil, then reduce heat and let it simmer for about 20 minutes or until all the water has been absorbed.
3.While the rice is cooking, pour the coconut milk and sugar into another saucepan and bring it to a simmer, stirring occasionally until the sugar has dissolved.
4.Pour half of the hot coconut milk mixture over the cooked rice, then stir to combine. Cover the pot with a tightly fitting lid and let it sit for 10 minutes to absorb the liquid.
5.Once the rice has absorbed the liquid, stir in the remaining coconut milk mixture. Cover it again and leave it to soak for a further 20 minutes.
6.Slice mango and serve with the rice as a garnish.
