3/4 cup chopped cilantro , divided
1/4 cup chopped lemongrass ( I used lemongrass paste )
3 long red chili peppers , minced
2 tablespoons oil ( optional )
1 can coconut milk
2 tablespoons Thai red curry paste
1 tablespoon tomato paste
salt , to taste ( I used none )
ground black pepper , to taste ( I used none )

Instructions

1.In a large bowl, mix together the ground chicken or turkey, fresh breadcrumb, 1/2 cup cilantro, lemongrass, and red chili peppers until well combined.
2.Shape the mixture into meatballs and arrange them in a slow cooker.
3.In a separate bowl, whisk together the coconut milk, Thai red curry paste, and tomato paste until smooth.
4.Pour the mixture over the meatballs in the slow cooker.
5.Cook on high for 3-4 hours or on low for 6-8 hours, until the meatballs are fully cooked.
6.Season with salt and ground black pepper, to taste.
7.Serve hot, garnished with the remaining cilantro.
