Ingredients

8 flour tortillas
2 boneless skinless chicken breasts , cooked and shredded
1 tablespoon canola oil
1/2 sweet onion , chopped
1/3 cup shredded carrot
1/2 cup shredded cabbage
4 garlic cloves , minced
1/2 teaspoon salt
1/2 teaspoon pepper
4 green onions , sliced
1/3 cup chopped crushed peanuts ( more for garnish )
1/4 cup chopped fresh cilantro ( more for garnish )
2 1/2 cups light coconut milk
2/3 cup sweet chili sauce
These Thai Chicken Enchiladas are a perfect fusion dish, combining the flavors of Thai cuisine with the popular Mexican dish of enchiladas. Instructions

1.Preheat the oven to 375°F.
2.In a large pan, heat the canola oil over medium heat and sauté the onion and carrot for about 3-4 minutes.
3.Add in the shredded chicken, garlic, cabbage, salt, and pepper, cooking for another minute.
4.Next, pour in the coconut milk and sweet chili sauce, mixing well.
5.Allow the mixture to simmer for 5-7 minutes or until it thickens.
6.Take each tortilla and add about 1/4 cup of the chicken mixture, rolling it tightly and placing it seam-side down in a baking dish.
7.Once all the tortillas are filled and rolled, pour the remaining chicken mixture over the top.
8.Bake in the preheated oven for about 20-25 minutes, or until the enchiladas are heated through.
9.Remove from the oven and sprinkle the chopped peanuts and cilantro over the top before serving.
