Ingredients

250 g dried rice noodles
800 g beef mince
1/4 cup red curry paste
2 tablespoons vegetable oil
250 g cherry tomatoes , halved
1 lebanese cucumber , halved , seeded , sliced thinly
4 spring onions , chopped finely
1 red capsicum , sliced thinly
1 cup bean sprouts
1/2 cup cilantro , chopped
1/2 cup sweet chili sauce
1/4 cup rice vinegar
This Thai-inspired meal is a refreshing twist on the traditional grilled beef patty. Instructions

1.Soak noodles in a bowl of boiling water for approximately 5 minutes and rinse with cold water
2.Prepare your patties by breaking up beef mince in a bowl and mixing with red curry paste
3.Divide the mixture into patties of your desired size and thickness
4.In a non-stick pan, heat vegetable oil over medium-high heat and cook patties for 3-4 minutes each side or until cooked to your liking
5.In a large bowl, mix together noodles, halved cherry tomatoes, sliced Lebanese cucumber, chopped spring onions, sliced red capsicum, bean sprouts, and cilantro
6.In a separate small bowl, whisk together sweet chili sauce and rice vinegar. Set aside for dressing
7.Serve patties with a generous heap of noodle salad and top with the sweet chili and rice vinegar dressing
