Ingredients

2 medium avocados
1/2 cucumber , cut into 1/2 inch slices peel on
1 3/4 cups plain fat-free yogurt
1/2 lime , juice of
3 tablespoons chopped cilantro
1/2 teaspoon Tabasco sauce or 1/2 teaspoon chili paste
1/2 teaspoon finely chopped lemongrass

Instructions

1.Cut the avocado in half and remove the seed and skin. Slice the flesh into 1/2 inch cubes.

3.Add the yogurt, lime juice, cilantro, Tabasco sauce or chili paste and lemongrass to the blender or food processor and blend until the ingredients are well combined.
4.Pour the soup into bowls and garnish with sliced cucumber and a sprinkle of chopped cilantro. Chill for 30 minutes before serving.
