1 egg , lightly beaten
1/4 cup olive oil
1 lb beef short rib ( flanken-cut )
kosher salt & freshly ground black pepper , to taste
4 garlic cloves , finely chopped

Instructions

1.In a large pot, heat 2 tablespoons of olive oil over medium heat. Add a small yellow onion, minced, and cook until softened.
2.Add 1 pound of ground chuck to the pot and break it up with a spatula or wooden spoon. Cook until browned, stirring regularly.
3.Mix in 1 tablespoon each of ground cumin, ground black pepper, minced cilantro, and minced parsley. Also add 2 1/4 teaspoons of kosher salt, 1 1/2 teaspoons of paprika, and 3/4 teaspoon of ground cinnamon. Stir well.
4.Add 1 lightly beaten egg and 1/4 cup of olive oil to the pot and stir to combine.
5.Add 1 pound of beef short rib (flanken-cut) and cook for 5 minutes on each side, until browned. Season with salt and freshly ground black pepper.
6.Mix in 4 finely chopped garlic cloves and 1 minced large yellow onion. Cook until the onions are softened and the garlic is fragrant, about 2-3 minutes.
7.Add 5 cups of beef stock and bring the mixture to a simmer.
8.Stir in 6 ounces of chopped spinach leaves and 1 can of white kidney beans (rinsed and drained).
9.Simmer the stew for 1 1/2 to 2 hours, until the beef is tender and the flavors have melded together.
10.Serve the tfina pkaila with cooked couscous and enjoy!
