1 onion , sliced into rings
1 tablespoon honey
2 skinless , boneless chicken breast halves - cut into strips
1/2 cup barbeque sauce
1/2 cup shredded sharp Cheddar cheese
1/2 cup shredded Monterey Jack cheese
8 flour tortillas

Instructions

1.Heat 1 tablespoon of oil in a skillet over medium-high heat.

3.In the same skillet, add the remaining 1 tablespoon of oil and chicken strips. Season with salt and black pepper. Cook for 6-7 minutes or until golden brown.

5.In a separate skillet, heat a tortilla for 1-2 minutes on each side.
6.Spread 1 tablespoon of shredded Cheddar cheese and 1 tablespoon of shredded Monterey Jack cheese over half of the tortilla.
7.Add onion and chicken mixture on top of the cheese, then fold the tortilla in half.
8.Cook the quesadilla on a skillet for 2-3 minutes on each side or until the cheese is melted.
9.Repeat with the remaining tortillas until the filling is used up.
