3 tablespoons frank 's redhot cayenne pepper sauce
1 teaspoon ground cumin
1/2 cup shredded monterey jack cheese
12 -15 spring roll wrappers , thawed
nonstick cooking spray

Instructions

1.In a large skillet, heat vegetable oil over medium heat.
2.Add green onions and red bell pepper, and cook for 2 minutes.
3.Add shredded lettuce, black beans, frozen corn, cilantro, redhot sauce, and cumin. Mix well and sauté until the lettuce wilts slightly, around 2-3 minutes.
4.Remove from heat and mix in shredded monterey jack cheese.
5.Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
6.Lay out each spring roll wrapper, one at a time, and brush with a little water around the edges.
7.Spoon 2 tablespoons of the vegetable mixture onto the bottom of each spring roll wrapper.
8.Roll up the wrapper into a tight cylinder around the filling.
9.Place the spring rolls onto the prepared baking sheet, seam side down.
10.Spray generously with nonstick cooking spray.
11.Bake in the preheated oven for 15-20 minutes or until spring rolls are golden and crispy.
12.Serve with your choice of dipping sauce and enjoy!
