Ingredients

1 cup quinoa
2 cups water
1 teaspoon kosher salt
1/4 cup fresh lime juice

1 can diced tomatoes with green chile peppers , drained
1 can garbanzo beans , drained and rinsed
1 bunch cilantro , chopped
2 avocados , cubed
1/4 cup crumbled cotija cheese
Tex-Mex Quinoa Salad is a healthy and delicious dish that incorporates the flavors of traditional Tex-Mex cuisine. It combines cooked quinoa with diced tomatoes, garbanzo beans, cilantro, avocados, and cotija cheese, all tossed in a tangy lime and olive oil dressing. This salad is perfect as a side dish for grilled chicken or fish, or as a light and refreshing vegetarian meal on its own.

Instructions

1.Rinse the quinoa in a fine-mesh strainer and add it to a medium saucepan with the water and kosher salt. Bring to a boil over high heat, then reduce the heat to low and simmer, covered, for 18-20 minutes, until the quinoa is tender and the water has been absorbed.
2.In a large mixing bowl, whisk together the fresh lime juice, olive oil, and ground black pepper until well combined.
3.Add the cooked quinoa, drained diced tomatoes with green chile peppers, drained and rinsed garbanzo beans, and chopped cilantro to the mixing bowl and toss until well combined.
4.Gently fold in the cubed avocados and crumbled cotija cheese, taking care not to mash the avocados. Serve the salad at room temperature or chilled.
