Instructions

1.In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté for 10-12 minutes until they are caramelized. Add in Tabasco sauce, beef broth, balsamic vinegar (or sherry wine), sugar, and cumin and cook for another 5 minutes.
2.In a large bowl, mix together the ground chuck and sirloin along with thyme, oregano, chipotle hot sauce, salt, pepper, and chili powder. Divide the mixture into 6 portions and shape them into patties.
3.Preheat the grill to medium-high heat. Brush the patties with vegetable oil and grill them for approximately 4-6 minutes per side or until cooked through.
4.In a small bowl, mix together goat cheese, minced garlic, mixed herbs, lime zest, and lime juice to make the spread.
5.To assemble, toast the sesame kaiser rolls and spread the goat cheese mixture on the bottom half. Top with burgers, caramelized onions, sliced roasted bell peppers, avocados, and romaine lettuce leaves. Drizzle with zinfandel and add a dollop of sour cream on top. Cover with the top half of the bun and serve.
