1 big onion , finely chopped
2 garlic cloves , sliced
1 tablespoon finely chopped fresh rosemary needles
1/2 teaspoon salt
pepper , freshly ground
150 g pancetta , sliced
8 sun-dried tomatoes packed in oil

Instructions

1.Grate the cooked and peeled potatoes into a large bowl.
2.In a skillet, melt the butter or heat the oil on medium heat.
3.Add onions, garlic and rosemary needles and saute until onions get soft.
4.Add the grated potatoes, pancetta and sun-dried tomatoes to the skillet, mix everything.
5.Season with salt and pepper to taste and pat the mixture down firmly in the skillet.
6.Cook on medium-high heat until the bottom is crispy golden brown, then flip over and fry until the other side is crispy golden brown too.
