2 tablespoons butter , softened

Instructions

5.Remove the veal scallops from the skillet and set them aside.
6.Add the Marsala wine and 1/4 cup of chicken stock to the skillet.
7.Bring to a boil, scraping the bottom of the skillet with a spatula to loosen the browned bits.
8.Add the remaining chicken stock and simmer for 2-3 minutes.
9.Return the veal scallops to the skillet and cook for an additional 2-3 minutes or until they are cooked through.
10.Remove the skillet from the heat and stir in the softened butter until it is melted and the sauce is smooth.
