2 large eggplants or 4 small eggplants , halved
5 tablespoons coconut oil
4 shallots , chopped
3 cloves garlic , chopped
2 cm ginger or 2 cm galangal , chopped
4 red chilies
400 g tomatoes , chopped or 1 can of peeled tomatoes
2 limes , juice of

Instructions

1.Cut the eggplants lengthwise into four pieces and sprinkle salt over them.
2.Heat 3 tablespoons of coconut oil in a frying pan over medium heat, then add the eggplants and cook until golden brown.
3.Place the fried eggplants on a plate lined with paper towels to soak up excess oil.
4.In a food processor, blend shallots, garlic, ginger, and red chilies until smooth.
5.Heat 2 tablespoons of coconut oil in a pan over medium heat and add the blended mixture. Stir-fry until fragrant.
6.Add the chopped tomatoes and stir-fry until the tomatoes are soft.
7.Add salt to taste and simmer for 10 minutes.
8.Add the fried eggplants to the chili sauce.
9.Squeeze the lime juice over the eggplants and chili sauce and serve with steamed rice.
