2 tablespoons oil

Instructions

7.While the chicken is cooking, rinse the rice in a fine sieve until the water runs clear.
8.Place the rice in a saucepan with 3 cups of water and bring to the boil over high heat.
9.Reduce the heat to low and cover the saucepan with a tight-fitting lid.
10.Cook for 12 minutes, then remove from the heat and let stand, covered, for 10 minutes.
11.Fluff the rice with a fork and stir in the chives.
