Ingredients

1 cup loosely packed fresh spinach leaves
1/2 cup water chestnut , finely chopped
1/4 cup green onion , chopped
1/4 cup low-sodium teriyaki sauce , divided
1 lb beef flank steak
salt & fresh ground pepper

Instructions

1.In a small bowl, mix together the spinach, water chestnut, green onion, and 2 tablespoons of teriyaki sauce until well combined.

3.Open the steak like a book and place a sheet of plastic wrap over it. Use a meat mallet to flatten the steak to an even thickness.

5.Tightly roll up the steak, starting from one end and rolling tightly until the whole thing is wrapped up.
6.Season the outside of the roll with salt and pepper and brush with the remaining teriyaki sauce.
7.Preheat your grill to medium-high heat, then place the steak onto the grate.
8.Grill for about 4-5 minutes per side or until cooked through to desired doneness.
9.Remove the steak from the grill and let it rest for a few minutes before slicing into spirals.
