Ingredients

1 bag boil-in-bag long-grain rice ( if no time constraints ) or 2 cups jasmine rice ( if no time constraints )
1/2 teaspoon salt , divided
1/4 teaspoon ground red pepper
1/4 teaspoon chili powder
1/8 teaspoon ground cumin
1/8 teaspoon black pepper
1 1/2 lbs peeled and deveined large shrimp
2 tablespoons vegetable oil , divided
2 teaspoons instant minced garlic
1/2 cup tequila
2 tablespoons minced fresh cilantro , divided
2 tablespoons fresh lime juice
Tequila shrimp is a zesty and appetizing dish popular in Mexico and coastal regions. This dish is prepared using a pan-seared shrimp cooked with a generous amount of garlic, tequila and fresh cilantro. A perfect blend of flavors that will surprise your taste buds. The dish is served over a bed of rice making it a wholesome meal. It's ideal for those who love seafood and are willing to try a new twist with it. Instructions

1.Cook rice according to the package instructions by adding water and half teaspoon salt, if using boil-in-bag, or follow instructions for jasmine rice.
2.In a small bowl, combine red pepper, chili powder, cumin, black pepper and half teaspoon of salt to make a seasoning.
3.Pat shrimp dry using paper towels then season the shrimp with the spice mix.
4.Heat a large skillet over medium heat. Add a tablespoon of oil to the pan and swirl to coat. Add half of shrimp and sauté for two minutes or until cooked. Remove shrimp from the pan and repeat with remaining shrimp.
5.Add garlic to the pan and sauté for 1 minute. Stir in tequila then cook for 2 minutes or until the liquid reduces and thickens. Remove from heat.
6.Add cooked shrimp, 1 tbsp. cilantro, and lime juice to the skillet then toss to coat.
7.Serve topped with remaining cilantro and with cooked rice.
