2 large ripe mangoes ( about 2 cups )
1 -2 chipotle chile in adobo
1/2 cup packed fresh cilantro leaves

1 fryer , cut up
1 cup long grain rice
1 cup chicken broth

This Tequila-Mango Chipotle Chicken cooked with Cilantro-Lime Rice is the perfect dish to kick off the summer season. Instructions

1.Preheat grill to medium-high.
2.In a blender, combine mangoes, chipotle chile, cilantro, lime juice, tequila, garlic, lime zest, and 1/2 teaspoon salt and puree until smooth.
3.Place chicken in a large, shallow baking dish and pour marinade over it. Turn chicken to coat all sides and let sit for 10-15 minutes.
4.While chicken is marinating, prepare rice. In a medium saucepan, combine rice, chicken broth, water, and remaining 1/2 teaspoon salt and bring to a boil. Reduce heat to low, cover, and simmer until all liquid is absorbed and rice is tender, about 18-20 minutes.
5.When chicken is marinated, grill for about 10-12 minutes per side or until thoroughly cooked through. Discard any remaining marinade.
6.Serve chicken over a bed of cilantro-lime rice and enjoy with your choice of sides such as shrimp or pork.
