Ingredients

4 boneless skinless chicken breasts , cut into strips
1 bunch fresh cilantro , chopped
1 medium onion , chopped ( Yellow or Red , your choice )
2 limes , cut into halves
1 tablespoon ground cumin
6 garlic cloves , chopped
1 cup gold tequila ( preferabally Anjeo ... do n't be cheap ... this part is important )
2 tablespoons butter or 2 tablespoons margarine
2 cups chicken broth
1 -2 tablespoon flour
6 cups cooked rice
2 cups portabella mushrooms , sliced

Instructions

1.In a large bowl, combine the chicken strips, chopped cilantro, chopped onion, juice of 2 limes, ground cumin, and chopped garlic. Mix well and let marinate for at least 30 minutes.
2.In a large skillet, heat the butter or margarine over medium-high heat. Add the marinated chicken strips and cook until browned, about 5-7 minutes.
3.Add the tequila and cook, stirring occasionally, until the alcohol has burned off and the liquid has reduced by half.
4.Add the chicken broth and sliced portabella mushrooms. Reduce heat to medium-low and let simmer for 10-15 minutes, or until chicken is cooked through and tender.
5.In a small bowl, whisk together 1-2 tablespoons of flour with 1/4 cup of water until smooth. Add the flour mixture to the skillet and stir well to thicken the sauce.
6.Serve the Tequila Lime Portabella Chicken over a bed of cooked rice, garnished with additional cilantro if desired.
