Ingredients

500 g pork tenderloin
50 g unsalted butter
1 garlic clove
125 g white breadcrumbs
125 g dried apricots
1 egg
1 tablespoon parsley
1 small onion
1 garlic clove

100 ml water

Tenderloin of Pork with Apricot Stuffing is a delicious and flavorful dish that is perfect for dinner parties and special occasions. Instructions

1.Preheat oven to 200C.
2.In a frying pan, melt half of the butter, and cook onions and garlic until golden brown. Remove from heat and let it cool.
3.In a mixing bowl, mix white breadcrumbs, dried apricots, parsley, tarragon, egg, and cooled onion mixture. Add salt and black pepper as per taste.
4.Cut pork tenderloin lengthwise and make a deep wide hole through the center of the meat.
5.Fill the apricot stuffing in the hole carefully and try to fit as much as possible.
6.Using trussing string, tie up the stuffed pork evenly so that it will cook evenly.
7.In a roasting pan, melt the remaining butter and sear the stuffed tenderloin until golden brown from all sides.
8.Add 100 ml water, orange zest, and apricot jam mixed with curry powder to the pan, and cover it with a lid.
9.Put the roasting pan in the preheated oven and roast the pork for 30-40 minutes depending on the size until its internal temperature reaches 135F or 57C.
10.Once done, remove the tenderloin from the oven and let it rest for 5-10 minutes until the string is cut off and cut into ½ inch slices to serve.
