Tender Tacos al Pastor is a beloved Mexican dish that traces its origins back to the spit-roasted marinated pork dishes of Lebanese immigrants in Mexico. The dish is typically made with pork that has been marinated in a mixture of dried chilies, spices, and pineapple juice before being slow-cooked to tender perfection. The combination of sweet and savory flavors makes it a popular choice for both casual and formal occasions. Tacos al Pastor are often served with a variety of toppings, including chopped onions, cilantro, and fresh lime, which add a burst of freshness and acidity to the dish.

Instructions

.Preheat the oven to 375 degrees F.
.Toast the dried guajillo and ancho chili peppers in a dry pan over medium heat for about 1-2 minutes, until fragrant.
.Place the toasted peppers in a bowl of hot water and let them soak for about 20 minutes to soften.
.Meanwhile, blend together the tomato, sliced pineapple, orange juice, onions, white vinegar, chipotle peppers, salt, garlic, cloves, cumin seeds, and dried oregano until smooth to make the marinade.
.Arrange the pork tenderloin slices in a shallow dish and pour the marinade over the top, using your hands to make sure the meat is well-coated.
.Cover and refrigerate for at least 2 hours, or overnight.
.After the meat is done marinating, spread the pork slices and pineapple slices on a baking sheet.
.Bake for 15 minutes, then remove from the oven and stir the pork and pineapples around a bit.
.Bake for another 10-15 minutes or until the pork is cooked through and the pineapples are starting to caramelize.
.While the pork is cooking, chop the onion and cilantro and set aside.
.Serve the pork and pineapples in warm tortillas with chopped onion and cilantro on top.
