Ingredients

1 1/2 lbs thick-cut round steaks , cut into 1 1/2-inch cubes , fat trimmed
1 can beef broth
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon seasoning salt ( I use Johnnie 's )
1 large onion , coarsely chopped
2 tablespoons butter
1/4 teaspoon thyme , crushed with fingers
3 -4 medium red potatoes , not small ones
1 cup sliced fresh baby carrots , measure after slicing
1 can corn , drained
1 can green beans , drained
1 can sliced mushrooms , drained ( optional )
2 cups beef gravy , homemade or packet kind
1/4 teaspoon pepper
1/4 teaspoon garlic powder
2 1/2 cups flour
1 cup cold butter , cut up
1 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/4 - 1/2 cup ice water
1 tablespoon milk

Tender Beef Pot Pie W-Thyme and Pepper Pastry is a savory and hearty dish that is perfect for cold nights. The beef is cooked in a savory broth until it is tender. The vegetables are then added to the dish to make a complete meal. The flaky pastry crust is seasoned with thyme and pepper which gives it a nice kick of flavor. The combination of beef, vegetables, and pastry makes this dish a complete and satisfying meal.

Instructions

1.Preheat oven to 375 degrees F.
2.Season cubed beef with onion powder, 1/2 teaspoon pepper and seasoning salt.
3.In a large skillet, heat 2 tablespoons of butter.
4.Sear beef on all sides over medium high heat in batches until browned.
5.Add chopped onion to the skillet and cook until transparent.
6.Add beef broth, Worcestershire sauce, garlic powder, and thyme.
7.Bring mixture to a boil, reduce heat, and let mixture simmer for about 40 minutes or until beef is tender.
8.Add sliced baby carrots, potatoes, corn, green beans and canned mushrooms in the skillet along with beef gravy, 1/4 teaspoon garlic powder, and 1/4 teaspoon pepper.
9.Let mixture simmer until vegetables are tender and gravy is thickened.
10.Pour beef and vegetable mixture into a 9 x 13 inch baking dish.
11.In a large mixing bowl, combine flour, salt, dried thyme, and 1/4 teaspoon pepper.
12.Cut cold butter into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs.
13.Gradually add ice water to the mixture, about 1/4 cup at a time.
14.Mix the dough until it comes together.
15.Turn the dough out onto a floured surface, knead a few times, then form a rectangle.
16.Cut the rectangle into 2 sections.
17.Roll each section into a 9 x 13 inch rectangle.
18.Place one rectangle over the beef mixture in the baking dish.
19.Top with the second rectangle of pastry.
20.Fold the edges of the pastry under and crimp to seal.
21.Cut a few slits in the dough to allow steam to escape.
22.Brush the top of the pastry with milk and sprinkle with a little bit of pepper and thyme.
23.Bake for 35-45 minutes or until golden brown on top.
