Ingredients

1/4 cup rice vinegar
1/4 cup low sodium soy sauce
1/4 cup mirin ( sweet rice wine )
2 teaspoons minced peeled fresh ginger
2 teaspoons vegetable oil
1 garlic clove , crushed
1 lb tempeh or 1 lb chicken , cut into 40 cubes
cooking spray
1 cup chopped onion
2 teaspoons minced peeled fresh ginger
1/4 teaspoon fine sea salt
2 garlic cloves , chopped
2 teaspoons curry powder
1/2 teaspoon ground turmeric
1 cup water
2 tablespoons chopped cashews
1 tablespoon fresh lemon juice
Satay is a popular Southeast Asian dish that typically consists of marinated meat skewers served with a spicy peanut sauce. Instructions

1.In a large bowl, combine rice vinegar, soy sauce, mirin, minced ginger, vegetable oil, and crushed garlic to make the marinade.
2.Add the tempeh or chicken cubes to the marinade, cover, and refrigerate for at least 2 hours or overnight.
3.Preheat the grill pan over medium-high heat. Lightly grease the pan with cooking spray.
4.Remove the tempeh or chicken cubes from the marinade and discard the liquid. Thread the cubes onto skewers.
5.Grill the skewers for 8-10 minutes, turning occasionally, until cooked through.
6.To make the curried cashew sauce, heat a medium-sized saucepan over medium heat. Add chopped onions, minced ginger, and salt, and sauté for 3-5 minutes, or until the onions turn translucent.
7.Add chopped garlic, curry powder, and ground turmeric, and cook for additional 1-2 minutes.
8.Add water and chopped cashews, and bring to boil. Reduce the heat to low and let it simmer for 10-15 minutes, or until the sauce thickens.
9.Remove the saucepan from the heat and let the mixture cool for 5-10 minutes.
10.Transfer the mixture to a food processor or blender, add lemon juice, and process until smooth. Serve the satay skewers with the curried cashew sauce on the side.
