1 tablespoon dry tea leaves ( Irish Breakfast , Earl Grey , green , jasmine , chai , whatever you like )
8 egg yolks
1 cup sugar
2 cups heavy cream
1/4 cup rum

Instructions

1.In a small bowl, mix gelatin with water and set aside.

3.In a large mixing bowl, beat egg yolks with sugar until thick and pale. Gradually add the cream mixture while beating continuously.
4.Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
5.Remove from heat and add in gelatin mixture. Stir until the gelatin is completely dissolved.
6.Pour the mixture through a fine-mesh strainer into a large mixing bowl. Add heavy cream and rum. Whip until well combined.
7.Place the mixture in an ice cream maker and churn according to the manufacturer's instructions. Transfer the churned ice cream into a container and freeze for at least two hours or overnight.
