Taylormade Swiss Steak is a classic dish that originated in Europe and became popular in America in the 1940s and 1950s. It typically consists of tender cuts of beef that are seared and then cooked low and slow in a tomato-based sauce with vegetables like onions, carrots, and celery. Taylormade Swiss Steak gets its name from the technique of 'swissing' - pounding the meat to make it thinner and more tender. However, this recipe uses an eye of round roast, which is sliced into steaks and cooked until tender in the flavorful sauce. It is a hearty and satisfying dish that is perfect for a cozy evening at home with family and friends.

Instructions

1.Preheat your oven to 350°F.
2.Put the flour into a shallow dish and mix in salt and pepper.
3.Cut your eye of round roast into 3/4-inch thick slices and dredge them into the flour mixture, shaking off any excess.
4.Heat bacon grease in a Dutch oven over medium heat and cook the beef slices in batches until well-browned on both sides. Remove the beef from the pan and set aside.
5.Add diced onions, celery, and carrots and sauté until they are soft and fragrant. Add the canned tomatoes and beef broth or bouillon and stir to combine.
6.Return the seared beef slices to the pot, making sure they are covered with the tomato mixture. Cover the Dutch oven with a lid and transfer it to your preheated oven.
7.Bake for 2 to 2 1/2 hours, or until the meat is tender and the vegetables are cooked through. Serve and enjoy!
