Ingredients

1/2 cup chopped onion
1 1/2 cups baby corn
1/2 cup tomato paste
1/2 teaspoon coriander seed
1/2 teaspoon cumin seed
1/2 teaspoon dried fenugreek leaves ( kasoori methi )
1 tablespoon fresh coriander leaves , chopped
1 green chili , chopped
1 teaspoon sliced gingerroot , soaked in
1 tablespoon vinegar
1/2 teaspoon red chili powder
3 teaspoons ghee
oil , to deep fry , as required
Tawa Makai is a popular North Indian snack that is made by pan-frying baby corn in a flavourful spice mixture of cumin seeds, coriander seeds, fenugreek leaves and red chili powder. Instructions

1.Boil baby corn in salted water until half cooked.
2.Remove the corn from the water and set aside.
3.Heat some oil in a pan and add cumin seeds, coriander seeds and dried fenugreek leaves.
4.Add chopped onion and saute until it becomes golden brown.
5.Add tomato paste, ginger root, green chili and red chili powder and cook well for 2-3 minutes.
6.Add baby corn and continue to cook, stirring occasionally, for about 5-7 minutes until it is cooked and coated with the spice mixture.
7.Heat some ghee in another pan and deep fry the corn until golden brown and crispy.
8.Garnish with chopped coriander leaves and serve hot.
