Ingredients

1 whole chicken breast
60 g butter
3 tablespoons flour
375 ml milk , low fat is fine
salt , to taste
fresh ground pepper , to taste
cinnamon
60 g seeded raisins
5 sheets phyllo phyllo pastry
125 g oil
Tavuk Borek is a traditional Turkish pastry that is made with phyllo pastry and filled with chicken and spices. Instructions

1.Preheat the oven to 180°C (355°F) and line a baking tray with parchment paper.
2.Boil the chicken breast in water until cooked through, then set aside to cool. Once cooled, shred the chicken into small pieces.
3.In a saucepan, melt the butter over medium heat. Once melted, stir in the flour and cook for 1-2 minutes, stirring constantly.
4.Gradually whisk in the milk, stirring constantly to ensure there are no lumps. Continue cooking and stirring until the sauce has thickened.
5.Season the sauce with salt, pepper, and a pinch of cinnamon, then add the shredded chicken and raisins.
6.Cut the phyllo pastry sheets into strips approximately 4 inches wide and 12 inches in length.
7.Brush each strip with oil, then place a spoonful of the chicken mixture onto the top third of each strip.
8.Fold the top corner of the strip over the filling to make a triangle, then continue folding the pastry back and forth into a triangle shape until you reach the end of the strip.
9.Brush the pastry with more oil, then place onto the prepared baking tray.
10.Bake for 20-25 minutes, or until the pastry is golden brown and crispy.
